Nowadays, it’s fair to say that customers are spoiled for choice when it comes to wine, even when they want just a glass rather than the whole bottle.
Offering just one or two wines by the glass is no longer an option, and many venues are now competing to offer the widest selection and offering unique features such as wine flights or specifically paired dishes. It’s not just bars and restaurants that need to preserve half opened bottles of wine. Many independent wine shops are now hosting in-store wine tastings and they need to be able to maximize the value of these by getting the most out of each bottle. There are a number of interesting wine preservation systems on the market which will help you keep your wine fresh, check out our round-up below:
Coravin: around £300, for potentially indefinite freshness Launched in 2013, this innovative device uses a thin needle to withdraw wine through the bottle’s cork, obviating the need to open it. As no air comes into contact with the wine, it will not ever spoil according to the manufacturers.
Vere de Vin: around £2,000, for two week freshness This is one of the original wine preservation systems, and this vacuum-based method works by injecting air into the wine. One of its key features is that it even works on sparkling wines, which are notoriously hard to keep fresh. The Vere de Vin will take up wall space and require gas cylinders, but it allows you to reseal unlimited numbers of bottles in seconds.
Enomatic: around £5,000, for three week freshness The enomatic may be the daddy of all preservation systems, not least because it’s so customer friendly. It allows the retailer to store and display multiple open bottles, all of which customers can access themselves using pre-paid cards. It’s already used to great effect in some wine shops and bars, and may be a great choice if you’re prepared to make the initial investment.
Presorvac: around £250, for two week freshness For ease of use, the Presorvac is one of the best. It doesn’t require any gas cylinders and is a handheld device that quickly does the job without fuss.
