The vintage is now officially over, but it is still one of the busiest times of the year for the Stobi Winery. At this time the Enologists are calculating what can be made from the new vintage by assessing the quantities of grapes harvested.
This helps the winery determine the quantity of wine which can be produced in addition to determining the wine quality. The wine makers work closely with the sales department to make plans from a commercial point of view in terms of what types of wine are destined for every specific market to ensure the needs of each customer are met in production. Although harvesting is the busiest time of year, there are still a lot of things going on at the winery at this time. Enologist Dane Jovanov is working with MW Jo Ahearne to ensure that wines are blended to meet UK tastes. The process of wine making at this time also includes the fining, ageing and bottling of the wines from previous vintages. This is the time when the new season really starts, so there are lots of wine presentations inside the winery to present new vintages. This takes place in the Stobi fine dining restaurant which is located in the heart of the winery, an ideal location to educate and inspire customers into the Stobi wine philosophy.
